Only Bone Golem leaves an exploitable corpse. I'm not sure that what you're describing is more than a glitch. According to ANet at least, it's impossible to raise/exploit a dying or dead (non-golem) bone creature.
Slight Side Note:
I kinda noticed that Flesh Golem acts really stupid outside of Cantha. I tried him in Tyria and he could take out a number of creatues in a few hits, but for the most part wandered around like an idiot while letting enemies tag him in the butt. Anyone else notice this?

Yeah, don't go by WikiPedia. Wiki works best for slang, but not for non-dictionary terms.
Either way, they already claimed a Flesh Golem should look like such, then altered it. It's like... pick a standard already.

Having read a fair dal in the esoteric, I have seen several recipes for golems. They appear to have been attempts to create life using body parts and the male half of the equation for fertilization. They ofcourse have a very low report for success. However, the traditional golem, whether made of clay or parts (Frankenstein like), were generally considered rather small - like Pinnocchio. Some text report them as having magical powers, carriers of messages, extensions of a sorceror's spying ability, and other things normally attributed to a witch's familiar. The difference is source and method of getting. Familiars are from a folk tradition about wise wo/men and golems about suppposed Qabbalistic sorcerors.
However, language is arbitrary. We are dealing with something translated to English/Western tradition from a fictional culture whose language we do not know. Perhaps golem is the closest the common speach of Tyria translates to our langauges. I am certain that 'golem' would not work well in Cantonese, Mandarin, Hindustani, Bantu, etc. Tho it would not be hard to spell in say Korean, it might mean something very different. <Grin>

Animate Zombie has got to be one of the best skill ideas ever. I would change my secondary just to have it. In fact I think wammos would be improved by this skill. Basicly get the wammo killed, zombie animate and you've got a wammo with +100 IQ.

ALthough, I will say that it'd be fun to animate a minion straight from the ground. Most of the games I've played (besides Diablo) allow necromancers to animate minions straight from the ground. This was nice because you didnt' have to exploit corpses all the time. But, the minions came at a cost. SpellForce (my most recent) required you to use mana to keep it alive. Basically, you'd have a -1 to your energy regen for every minion you summon straight from the ground. I could live with that. It wasn't bad in other games and I don't think it'd be too bad here.

To be honest, your definition golem doesn't fall under the first definition, either. That 10ft tall monstrosity you picture first is indeed humanoid, but looks far from human.
I wish I had my D&D books at my dorm; I forgot the name of the steel golem that looks like a bull.

I take it you've never been to Urban Dictionary?
Some professors won't allow you to cite Wikipedia as a source because it is too good; a Wikipedia article, regularly update by experts on the topic, are the most reliable source of information today.
Wikipedia only becomes unreliable when people who don't know what they're talking about edit it. *cough*

Fair enough.
Then we should rename the Nagas as The Forgotten. It's only fair since both are snake-like creatures.
If you don't see the logic in my comment, then maybe you'll see my point.
Animated Flesh Golem is a very different looking creature from the Flesh Golems of Perdition Rock. To even pretend to call it a Golem is quite silly. Especially when you consider traditional RPG Definitions and Dogma (if you will).
Here's a little more food for thought.
Now look at the shape and form all all the golems in Guild Wars. Tell me who looks out of place. Who does not fit the mold given to golems by ANet (not a dictionary or anyone else).
ANet kinda set a standard there. Two arms, bipedal, upright stance... that description fits all but 1 of ANet's golems. So, calling it a golem (in general) isn't true to what ANet set as teh model.
